Kolkatans are better known for their taste and choice for recipe. Although Bengali dishes are very popular, yet preparations of various countries and places in India have grown popular with the cosmopolitan characteristics of the city. In this cuisine section, we are trying to figure out some very special and delicious menu that could be easily prepared at home. The recipe has been brought in here from different sources and we thank them for their cooperation in enlighten us with the special dishes.

Sada Pathaar Jhol (Mutton)

All are affraid to take red meat in these days especially after 40. Then should we forget Pathar Mangso, popularly known as red meat? The answer is No. There are still ways and means to have Pathar Mangso, but with unique recipe causing no harm to our health.

Ingredients
   
Pathar Mangso fresh without much of fat 1000 grams
Sour Curd 100 grams
Onion 150 grams
White Oil 50 grams
Garlic 1 whole piece (standard size)
Sugar 1 teaspoon
Salt as applicable
Tejpata 4 Nos
Elachi, Labanga and Darchini 5 gms
Cream 5 table spoon



Preparation

Step 1 - Clean mangso (meat)

Step 2 - Chop Onions in four pieces each.

Step 3 - Peel the garlic

Step 4 - Put mangso with onion and garlic in a pressure pan.

Step 5 - Add little water

Step 6 - Close the lid of the pan.

Step 7 - Allow these to get steamed in the pan for 10 minutes.

Step 8 - Unlid the pan.

Step 9 - Keep aside the stock and the mangso with onion and garlic.

Step 10 - Put a frying pan on the oven.

Step 11 - Put the while oil in it.

Step 12 - Put 1/2 to 1 teaspoon full of sugar.

Step 13 - Put 1/2 to 1 teaspoon full of sugar.

Step 14 - Put the Garammasala and Tejpata.


Step 15 - Put the Mangso in the pan.

Step 16 - Add salt to requirement.

Step 17 - Fry the entire emulsion for 5 minutes.

Step 18 - Add the curd and the stock .

Step 19 - Stir the entire thing for 2 minutes on light heat.

Step 20 - Add salt to requirement.

Step 21 - Add cream to it allow the entire thing to get baked for 2 minites more
              on light heat.

The preparation is ready to serve
