Kolkatans are better known for their taste and choice for recipe. Although Bengali dishes are very popular, yet preparations of various countries and places in India have grown popular with the cosmopolitan characteristics of the city. In this cuisine section, we are trying to figure out some very special and delicious menu that could be easily prepared at home. The recipe has been brought in here from different sources and we thank them for their cooperation in enlighten us with the special dishes.

Chaltar Achar

It is a very simple preparation made out of Chalta and Goor. In this modern age we have forgotten many a traditional dishes which were very popular amongst the Bengalis. Chalta is a green sour fruit which is easily available in the market. Adding a bit more ingredients can make it very tasty.

Ingredients:
Chalta : 2 Nos
Red Dried Chilly : 4 Nos
Juggery (Goor) : 250 grams
Panch Foron : Half teaspoonful
Mauri : 1 teaspoonful
Mustard Oil : 2 Tablespoonful
Salt : As per requirement

Preparation:

  • Fry the Mauri and Red Chilly on a hot pan without putting any oil.
  • Peel the Chalta. Remove the outer skin and cut the inner piece is small pieces.
  • Crash the pieces a bit.
  • Put pan on the oven.
  • Put mustard oil in the pan.
  • Allow the oil to be brown by color.
  • Put Panchforon in the oil
  • Put the Chalta pieces into it.
  • Allow the entire mix to fry for 5 minutes
  • Add 2 cups of water in it.
  • Add the Mauri and Chilly Dry fry in the mix
  • Add required salt in it.
  • Allow the entire mix to get boiled for about 5 minutes till it becomes thin paste.
  • Cool the mix
  • The preparation is ready to serve
